To make the Rum Clément, the juicy sugar cane is crushed and pressed in pure juice. This juice is then fermented in hanging natural fermentation two in three days in wine of sugar cane " Vésou ". This delicious Vésou is carefully distilled in 72 % to protect the aromas and the distinctive flavors of the sugar cane. The white rum which results from it is stored now during one year in new oak barrels to absorb the wooded aroma. And then stored in barrels of bourbon during at least three years.
Robe: beautiful color 'Havana'
Nose: aromas of grilled almonds, spices and pepper.
Taste: woody, roasted notes, and of dried fruits.
Final: good length in mouth, subtle presence of grilled notes.
